
'A Yummy Easter Treat'
Ingredients:
225g cream cheese, softened
1/2 cup icing sugar
1/2 cup finely grated carrots
1/2 cup crushed pineapple, drained
1/2 tsp ground nutmeg
1/4 tsp ground ginger
1/2 cup chopped pecans or walnuts (more if needed)
1 cup shredded coconut, to coat
METHOD:
Mix the ingredients: In a large bowl, beat the cream cheese and icing sugar until smooth. Add the grated carrots, crushed pineapple, cinnamon, nutmeg, and ginger. Mix until well combined.
Shape the cheese ball: Transfer the mixture onto a piece of plastic wrap. Gather the plastic wrap around the mixture and shape it into a ball. Refrigerate for at least 2 hours, or until firm.
Coat the cheese ball: Once the cheese ball is firm, roll it in the shredded coconut until it's evenly coated, then roll it in chopped pecans or walnuts for added texture and flavour.
Serve the cheese ball on a serving platter and serve with your favourite crackers, or fruit slices.
