Ingredients"-
7 slices beef schnitzel
5 cups fresh breadcrumbs
1 onion
2 Tbsp Butter
⅓ cup Milk
1 Tbsp Mixed herbs
2 Tbsp Flour
2 cups beef stock
1 tsp Salt & pepper to taste
METHOD:-
Stuffing:-
Combine breadcrumbs, ½ the onion (diced), herbs, salt & pepper in a bowl.
Add the butter and rub into the breadcrumbs until it's all combined, then add the milk and mix it together. Use your hands to do this step, it's much easier.
Assemble Beef Olives:-
Place some of the breadcrumb mix into each slice of beef, roll up and secure with toothpicks or skewers.
Using a pan that can go from stove to oven, brown each roll in a little oil, then remove and put to the side.
In the same pan add the remaining ½ onion, sliced finely, and cook for a few mins.
Add the flour to the pan, add a little extra oil if needed. Cook stirring for a few mins then start adding the beef stock a little at a time, stirring to combine, to make a gravy.
Place the lid on the pan and cook in the oven for approx 2hrs at 180°C or until tender.
Serve with lashings of mashed creamy potato and peas.
