Ingredients: -
Paua (approx 300g),
1 carrot (chopped roughly),
1 onion (quartered),
1 slice of old bread,
Approx 1 cup of flour,
1 tsp baking powder,
1 finely chopped dried chilli, (optonal)
Milk,
Salt & Pepper,
Lemon,
METHOD: -
Put the stale bread in the blender and make crumbs, empty into a bowl. Give the paua a good bash with a rolling pin. Then you need to mince the paua – if you don’t have a mincer use a blender. Add the carrot and the onion and blend. Now add flour, baking powder and the chilli to the bowl with the breadcrumbs. Add enough milk to create a batter and season with salt and pepper. Combine the batter and the minced paua mixture. Fry a small tablespoon of the mixture in lots of butter. Serve immediately with a wedge of lemon and your favourite salad.
