Ingredients: -
1 cup grated cheese,
80g butter,
½ cup self-raising flour,
2 tsp garlic, minced,
3 cups milk,
1 onion, diced,
1 clove garlic, diced,
Meat of 1 crayfish,
Salt, pepper & lemon, to taste,
To Serve: -
Lettuce, shaved carrot, chives
METHOD: -
In a pot of boiling salt water add your crayfish and cook for 8 mins or until flesh is firm (Do not overcook)
In a saucepan melt butter and add flour, stir until crumbly.
Add milk gradually continuously stirring, then add grated cheese and minced garlic, turn off heat when desired consistency is reached.
Fry diced onion and garlic until clear, add in shredded crayfish meat and season to taste, then add into the cheese sauce and pour into cray shell, bake under a hot grill for approx 6 mins or until golden.
Serve on a bed of lettuce, with shaved carrot, sprinkle over chives.
