Country Sausage Casserole

Ingredients: 
500 g pork sausages
1 Tbsp oil
1 medium sliced red pepper
1 sliced onion
1 grated garlic clove
200 g diced bacon
2 Tbsp gravy powder
1/2 cup water
1 Tbsp Worcestershire sauce
425 g can diced tomatoes
2 Tbsp fresh, chopped parsley
METHOD:
Cook sausages. Set aside and keep warm.
Heat oil in a saucepan, add onion, garlic and bacon and cook for 3 mins.
Heat saucepan over med. heat. Combine gravy mix with water and cook in saucepan until thickened. Add Worcestershire sauce, tomatoes, red pepper and parsley. Add gravy mixture to pan and mix well. Bring to the boil, stirring continuously.
Reduce heat and simmer for 5 mins.
Serve with mashed potatoes and favourite veges.
