Ingredients:
45Og breakfast sausages
1/2 cup chopped onion
1/2 cup chopped bell pepper (optional)
3 cups diced potatoes
1 cup shredded cheese (optional)
Salt and pepper to taste
Fresh thyme
METHOD:
In a large pan, cook sausages over medium heat until browned. Remove and set aside.
In the same pan, add onion, bell pepper (optional), and potatoes. Cook until vegetables are tender, and potatoes are golden brown.
Return sausages to the pan and stir to combine. Sprinkle cheese over the top.
Season with salt and pepper, and garnish with fresh thyme if desired.
