Ingredients: -
200 g boneless chicken breasts,
2 Tbsp Vegetable oil,
2 medium onions, diced,
6 Carrots, peeled & diced,
3 medium Celery stalks, diced,
4 cups Chicken broth,
2 400g cans of diced tomatoes (undrained)
2 teaspoons basil,
3 cups thin noodles,
1/2 teaspoon black pepper,
Crackers to serve
METHOD: -
Heat oil in large saucepan over med heat. Add onion, carrots and celery and saute 5 min or until softened. Add broth, tomatoes, chicken and basil. Simmer uncovered 30 min or until chicken is cooked through.
Transfer chicken to a plate. When cool enough to handle coarsely chop. Return to pan, add noodles, and cook 4 min or until tender. Add pepper.
Serve hot with your favourite crackers.
