Cob Loaf with Bacon and Cheese Filling

Ingredients: -
Cob Loaf: - 
1 cup (250 ml) warm water,
1 ½ tsp of active dry yeast, 
2 tsp sugar, 
3 cups high grade flour, 
1 Tbsp olive oil, 
1 tsp salt, 
 Extra flour for dusting - 
METHOD: -
Add water, yeast and sugar to the bowl of a stand mixer or large mixing bowl and combine using the dough hook or a whisk. Allow to sit for 5 mins for the yeast to activate.
Add the remaining ingredients and knead for 7 mins on the lowest speed of your mixer, or for 10 minutes by hand until the dough is smooth and elastic and bounces back when you press it lightly.
Cover with a clean tea towel and put in a warm place to rise until doubled in size (approx 1 hour).
Grease a 20 cm round cake tin with cooking spray (or use a baking tray lined with baking paper). Gently punch the dough down and shape into a round loaf approximately 15 cm in diameter. Place in the cake tin or on the tray and using a sharp knife, make a criss cross pattern on top of the loaf. Cover with lightly greased glad wrap and put in a warm place to rise until doubled in size (approx 40 minutes).
Heat the oven to 200°C. Once the bread has risen, remove the glad wrap, sprinkle the top with flour and bake for 30-35 mins until the loaf is golden brown and sounds hollow when you tap the bottom of the loaf. 
Turn the loaf out onto a cooling rack and allow to cool before slicing and serving or before slicing off the top and turning it into a filled cob loaf!
Bacon and Cheese Filling: -
Ingredients: -
250 g bacon rashers diced, 
1 onion diced large, 
250 g cream cheese, 
1 1/2 cups cream, 
2 cups mozzarella grated, 
1 cup tasty cheese grated, 
Assemble Cob Loaf and Filling: -
Cut the top off cob loaf and pull the soft bread out.
Place the top and stuffing aside.
Fry onion and bacon, place in a bowl.
Add the block of softened cheese, cream and grated cheeses. Mix well and fill the cob loaf.
Place bread lid on and wrap in foil.
Bake at 180°C for 45 mins.
Remove foil and cook for a further 10 mins.
Add the bread pieces and bake for 7-10 mins to crisp up.
To serve, place on a heat resistant platter with crispy bread pieces around the outside to use as dippers and vegetable sticks.
