Cheese & Potato Bake
Ingredients:
4 large potatoes, unpeeled
¼ cup butter, cubed
1 Tbsp grated onion
1 tsp salt
½ tsp dried thyme
1/8 tsp pepper
1 cup shredded cheese
1 Tbsp chopped fresh parsley
METHOD:
Thinly slice the potatoes and place in a greased shallow 20 x 20 x 5 cm baking dish. In a small pan, melt butter; stir in the onion, salt, thyme and pepper until onion is coated with butter.
Spoon over potatoes. Cover and bake at 200 C° for 45 mins or until potatoes are tender. Sprinkle with cheese and parsley. Bake, uncovered,15 mins longer or until cheese is melted.
Serve on its own with a nice salad or with your favourite meat dish.
