
‘Having Fun with the Bunnies’
Ingredients:
1 cup flour
1 Tbsp sugar
1 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
1 cup buttermilk (If no buttermilk - substitute with 1 Tbsp of lemon juice into a liquid measuring cup, then add enough milk to reach the 1 cup line, stir and leave for 5-10 mins)
1 large egg
2 Tbsp melted butter
Cooking spray or additional butter for the pan
White marshmallows, strips liquorice, for decoration
METHOD:
Prepare the Batter:
In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
In another bowl, whisk together the buttermilk, egg, and melted butter.
Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix; it's okay if there are a few lumps.
Cook the Pancakes:
Heat a non-stick pan over medium heat and lightly grease with cooking spray or butter.
Pour batter onto the pan to form one large pancake for the bunny's body and one smaller pancake for the bunny's head.
For the ears, pour two oval-shaped pancakes. You can also make two small round pancakes for the bunny's feet.
Cook until bubbles form on the surface and the edges look set, then flip and cook until golden brown on the other side.
Make the Bunny Pancake:
Place the large pancake on a plate for the body.
Position the smaller pancake above it for the head.
Attach the oval pancakes as ears on top of the head.
Place the small round pancakes at the bottom of the body for the feet.
Decorate the Bunny:
Use the white marshmallows for the tail and paws on the feet.
Cut 6 thin strips of liquorice and place on each side of the face for the whiskers.
You can use your imagination and do the bunny facing upwards.
Serve with fresh fruit for breakfast, the kids will love them.
