Boil up is a traditional Maori food from Aotearoa NZ. It is a broth/soup made from meat, bones, greens and starchy vegetables boiled together in a pot. It can also contain doughboys which are flour dumplings made up of simply flour and water.
Ingredients: -
2 kg meaty bacon bones or pork bones,
2 med potatoes, peel & slice into chunks,
2 med kumara, peel & slice into chunks,
½ kamokamo, peel & slice into chunks,
1-2 good bunches of puha or watercress, thoroughly cleaned & chopped,
1 Tbsp salt
Doughboys: -
1½ cups self-raising flour,
1 cup high grade flour
1 tsp salt,
Flour for rolling,
METHOD: -
Bring 2 litres of water to the boil in a large pot. Add the salt, (no salt if using bacon bones)
Add the bones, cover and simmer for 1½ hours. Top up with water if it gets too low.
For the doughboys, mix the 2 flours and salt with 1 cup warm water to form a soft dough. Divide and shape into 8 balls.
Cover until needed.
Add the potato, kumara and kamokamo to the pot and continue cooking gently for 5 mins.
Add the watercress and doughboys to the pot.
Boil gently with the lid on for 8–10 mins, until the doughboys are big and fluffy.
