Ingredients: -
4 very ripe bananas,
1/3 cup melted butter,
1 cup sugar,
1 egg beaten,
1 tsp vanilla essence,
1 tsp baking soda,
Pinch salt,
1 ½ cups flour -
METHOD: -
Preheat oven to 180°C. Spray a 25cm x 15cm x 8cm loaf tin with cooking oil and line with baking paper.
In a large bowl, mash bananas with a fork. Add melted butter. Mix in sugar, egg and vanilla. Sprinkle baking soda and salt over the mixture, then sift in flour. Mix well.
Pour mixture into a loaf tin and bake for 50 minutes.
