Ingredients:
Pie crust
4 slices bacon, cooked and crumbled
1 cup milk
5 eggs, slightly beaten
1/4 tsp salt
1/4 tsp pepper
1 cup grated cheese (cheddar or swiss)
1/4 cup grated parmesan cheese
1 cup fresh baby spinach leaves, chopped
2-3 green onions, with green parts, sliced thinly
METHOD:
Preheat oven to 210°C. Line a 9-inch pie plate with store bought pie crust and crimp the edges. In a medium bowl, whisk milk, eggs, salt, and pepper. Set aside.
Layer cooked bacon, cheeses, spinach and green onions in the crust-lined pie plate. Pour the egg mixture over the top. Bake 15 minutes in the oven at 210°C. Reduce the oven temperature to 170 C and continue to bake for another 20 to 25 minutes, or until a knife inserted in the middle comes out clean. Cool 10 minutes before slicing.
Serve with fresh green salad.
