Ingredients: -
4 rashers of bacon, finely diced,
1kg Brussels Sprouts,
1 small red onion, finely diced,
Salt & Pepper, to taste,
½ lemon, juiced,
2 Tbsp fresh parsley, finely chopped,
METHOD: -
Trim and halve brussels sprouts, place in a pot of boiling water and cook for 3 mins.
Drain, and cool under cold water, and drain again.
Heat butter in a large frypan and cook bacon over medium heat until fat starts to run, approx 5 mins. Add onion and cook for about 4 mins. Add brussels sprouts and stir-fry over high heat until tender and starting to caramelise, approx 5 mins.
Season, and drizzle with lemon juice, sprinkle with parsley and serve hot.
