Avocado Tomato & Cucumber Salad
Ingredients:
1 long diced cucumber
4 diced tomatoes
3 ripe diced avocados
½ diced red onion
¼ cup fresh chopped coriander
1 lemon, juiced
Salt, to taste
Pepper, to taste
2 Tbsp olive oil
Method:
Slice and dice the cucumber and tomatoes.
Avocado: slice and carefully remove stone, then scoop out inside and dice.
Peel the onion and remove the tops, then slice.
Chop coriander: and place in a large salad bowl with previous ingredients.
Toss with olive oil, lemon juice, salt and pepper.
Serve in a bowl with sour cream and your favourite mayonnaise.
